Mains
Chicken Cajun BBQ
lb ground chicken (or turkey for a leaner option)…
Ingredients
- 1 lb ground chicken (or turkey for a leaner option)
- 1 tbsp olive oil (or avocado oil)
- ½ onion, finely diced (yellow or red)
- 1 bell pepper, finely diced (any color; green adds bitterness, red/yellow for sweetness)
- 2 cloves garlic, minced (or ½ tsp garlic powder in a pinch)
- 2 tbsp Cajun seasoning (adjust for heat—use store-bought or make your own*)
- 1 tbsp tomato paste (for depth)
- 1 cup tomato sauce (or crushed tomatoes for texture)
- I used 4 or 5 Tbsp of Ketchup instead of Tomato paste and sauce (May need more if
- it is too dry)
- 1 tbsp Worcestershire sauce (or soy sauce for umami)
- 1 tsp brown sugar (or honey to balance acidity)
- Salt and black pepper to taste
- 4-6 burger buns (toasted with butter for extra crunch)
- Optional toppings: Sliced jalapeños, pickles, shredded cheese, or coleslaw
Instructions
Heat olive oil
Cook chicken until no pink remains
Sauté Aromatics (Onions, Peppers, Garlic) with Chicken for 5 min or until soft
Sprinkle Cajun seasoning; stir to coat evenly.
Stir in tomato paste, tomato sauce, Worcestershire sauce, and brown sugar.
May need more ketchup but not too much
Reduce heat to low; simmer for 10-15 mins until thickened. Taste and adjust salt/pepper.
Taste, if too spicy could add ketchup or brown sugar
